Candied Ginger (Refined Sugar-free, Gluten-free, Plant-based)

January 11, 2017 By Jana Leave a Comment

Candied Ginger

Candied Ginger: Spice up your sweet or savory dishes and add all the health benefits ginger has to offer. An easy DIY! If your prior experience with ginger goes no further than a gingersnap or gingerbread, take note: Ginger is spicy! It can really bring some kick to your dish. But it brings more than heat . . . Ginger or ginger root comes from the rhizome (or underground rooty stem) of a flowering ginger plant. It has been used for centuries by other cultures for its medicinal value. ...

Easy Coconut Whipped Cream (Gluten-Free, Vegan / Plant-Based)

Coconut Whipped Cream

Easy Coconut Whipped Cream: Thick, rich, creamy and dreamy--yet dairy free. Only 5 minutes of your time! I figured after my post for Easy Homemade Coconut Butter, the next logical recipe would be Easy Coconut Whipped Cream. Maybe I'm wrong, but my perception is that there are basically two types of people in the world: Those who adore coconut and those who abhor it! Until recently, I fell into a group that most would say is a minority -- I was indifferent to coconut. I could not ...

Easy Homemade Coconut Butter (Gluten-Free, Vegan / Plant-Based)

February 28, 2016 By Jana 2 Comments

Coconut Butter

Easy Homemade Coconut Butter: Creamy, delicious, incredibly nutritious. Done in less than 10 minutes! All you need to make homemade coconut butter or manna (yes, they are the same thing) is shredded or flaked coconut, a food processor or high-speed blender, a spatula, and about 10 minutes. Since it's made from dehydrated coconut meat, it contains all of the same nutrients that you benefit from when eating coconut. To make about 1/2 cup, place 2 rounded cups of shredded or flaked coconut in ...

Golden Pomegranate Scones with tips for easily removing Arils / Fruit (Gluten-Free, Vegan / Plant-Based, Refined Sugar-Free)

November 6, 2015 By Jana Leave a Comment

Golden Pomegranate Scones

Golden Pomegranate Scones are tiny bursts of sweet and tart pomegranate juice complemented by the caramel-like sweetness of golden raisins. They will tingle your taste buds and thrill your body and soul! Pomegranate Season I'm really more of a warm weather kind of person.  But I have to say I love autumn and winter for all of the cool fruit and vegetables that come into season. Pomegranates definitely fall into this category. The arils (or seeds) are little ruby colored jewels that ...

fresh produce

In his excellent book Fast Food Nation, Eric Schlosser notes that Carl Karcher, founder of Carl's Jr. hamburger chain, had great expectations for Christmas because it meant getting a single orange to enjoy.  Most kids in America today couldn't fathom the idea of getting a piece of fruit as a present.  And while much of Karcher's anticipation was the result of a modest upbringing, what a shame it is that many folks don't--and can't--appreciate the wonder of a single piece of fruit. There is so ...

There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!

I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!

With the holidays fast approaching, I am always on the lookout for great gift ideas. Gina's cookbook, and all it has to offer, would definitely make a lovely present to bestow! You can find Gina and her cookbook @foodieandwinelover
Sometimes no plan is the plan! At least that was t Sometimes no plan is the plan! At least that was the case this weekend as I traveled down the apropos named "Road to Nowhere"--alternatively Corridor H in West Virginia. Resistant to abandon my plans to study for the day as I eagerly look forward to completing my continuing education and additional certifications in nutrition and wellness.

After some convincing I acquiesced. I've spent much of my life in two of the neighboring states to West Virginia, but my travels there rest solidly in the single digits. Once firmly afoot the gorgeous Appalachian Mountains, I realized a deficit in my life. Air--fresh air. Breaths--slow and deep. Healing--quieting stress in mind and body.
🍁
Looking around I knew it was important to capture this moment. A reminder. Grabbing my phone that had long since disconnected itself from cyberspace, I began snapping pictures. The leaves are turning, the wind turbines are spinning, and the colors are amazing. I've shared a couple above if you'd like a taste.

I am a planner and, "A goal without a plan is just a wish." Antoine de Saint-Exupéry. But on this day letting go of the plan was the best plan of all! So tell me, are you a planner?? Do you plan not to plan?? How do you unplug? Have you taken a ride on the road to nowhere?

But did you know they also amp up the nutrient value of your dish? A tablespoon of parsley has 8% of your Daily Value of vitamin C and can be a natural diuretic. Many herbs contain antioxidants and can act as anti-inflammatory agents. If you don't already love herbs, you will after you watch the live chat I had with Lori Corbin. Along with nutritional benefits, we talk about how to store, use, and even grow your own! Lori provides great tips for growing herbs inside and out!
