Autumn always seems to be a busy time in most households. Students returning to school, attending fall festivities and the much-anticipated lead in to the holidays. Our house is no exception. I am no exception. This fall I’ve been taking classes to earn my certificate in plant-based nutrition. It has been a great experience across the board! I have learned so much on a scientific level about the benefits and healing properties of a plant-based diet. When you take the time to look at all of the research studies for what a whole food plant-based diet can do for disease treatment (and even reversal), it is particularly amazing. Can you tell I am excited about this?! I look forward to sharing with you all that I have learned.

So how does my coursework relate to the Banana Bread Breakfast Bowl? Besides the fact that it IS a whole food plant-based/vegan meal? I took an already action-packed schedule and inserted these classes first thing in the morning. This was my insurance policy, my way of prioritizing them to be sure that they wouldn’t get lost in the hustle and bustle of the rest of the day. When I began my classes I would start each day with a nice hot bowl of oatmeal.  Warm for the cold mornings, satiating, and filled with healthy carbs to provide my brain the energy it needed at that early hour.

One pre-dawn morning, after starting many days with oatmeal, I found myself standing in the kitchen staring down at my half cup of oatmeal ready and waiting for the H2O. I couldn’t do it. Not one more day of plain oatmeal. Still a nutrition packed breakfast, but I was bored! I grabbed a ripe banana and mashed up half of it, added a heaping spoonful of cinnamon for its antioxidant and insulin sensitivity boosting properties (just to name a couple of benefits), oatmeal, and water. Once it finished cooking, I threw in some golden flax meal, maple syrup, and chopped pecans. A drizzle of cashew milk and I had a breakfast I couldn’t wait to try. Wow! Total yumminess!! It tasted like banana bread!

Banana Bread Breakfast Bowl

Banana Bread Breakfast Bowl! In five minutes you can change your same ol' morning breakfast cereal into something delicious, nutritious and fulfilling!

Ingredients

  • 1/2 cup gluten-free quick cooking oats
  • 1/2 very ripe banana (mashed)
  • 1/4 to 1/2 teaspoon ground cinnamon
  • 1 tablespoon maple syrup (or coconut palm sugar, or both)
  • 1 tablespoon golden flax meal
  • 2 tablespoons chopped pecans (substitute walnuts)
  • cashew milk (or nut milk of choice to top)

Instructions

  • 1) Mash banana in bowl with a fork. Add gf oatmeal, cinnamon, and 3/4 cup water and stir together with a spoon. Cook in microwave on high for 2 minutes, stirring after one minute. Or cook on stovetop in small saucepan until simmering and stirring for 30 seconds. Remove from heat and return to bowl.
  • 2) Add maple syrup, golden flax meal and pecans. Stir together and top with desired amount of nut milk.
  • Note This will reheat well if you desire to make extra and refrigerate for breakfast the next day as well!

There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!

I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!

At least that was the case this weekend as I traveled down the apropos named "Road to Nowhere"--alternatively Corridor H in West Virginia. Resistant to abandon my plans to study for the day as I eagerly look forward to completing my continuing education and additional certifications in nutrition and wellness.

After some convincing I acquiesced. I've spent much of my life in two of the neighboring states to West Virginia, but my travels there rest solidly in the single digits. Once firmly afoot the gorgeous Appalachian Mountains, I realized a deficit in my life. Air--fresh air. Breaths--slow and deep. Healing--quieting stress in mind and body.

Looking around I knew it was important to capture this moment. A reminder. Grabbing my phone that had long since disconnected itself from cyberspace, I began snapping pictures. The leaves are turning, the wind turbines are spinning, and the colors are amazing. I've shared a couple above if you'd like a taste.
