Ingredients

Easy-Peasy

Just four ingredients (not including salt and pepper) and most of them are probably already in your kitchen. Juice your lemon, mince your garlic, chop your potatoes–in the oven they go! Lemon Garlic Oven Fries have the home-style love french fries always bring to a meal with a flavorful fancy flair.

And to make it even easier, you can prep the recipe the night before. Mix the potatoes and lemon juice mixture together and store in a bag or container in the refrigerator. Then all you have to do is bake them in the oven the next day!

Oil-free Oven Fries?

Oil is currently one of the most heavily debated topics in the world of health and nutrition. Some believe it is much adieu about nothing, others contend that the source and processing determine its degree of health or harm. Still others feel that it has no place in the diet at all.

I think one thing we can probably all agree on is that there is no harm in eliminating it from some dishes. Especially those that don’t really need it. When I developed my recipe for Vegan Zucchini Cakes I wanted them to be oil-free. In the process of experimenting with oven baking, to achieve a nice brown crispy exterior minus the aid of oil, I discovered a hidden use of lemon juice. The Zucchini Cakes turned a beautiful golden brown with a nice crisped exterior. Applying that same methodology to my french fries yielded a light airy fry with the traditional crunchy exterior and a soft tender inside. Yum! And no fat–double yum!!

These Spuds Are No Duds

Potatoes really get a bad rap. Many think of them as just a carbohydrate. Oh contraire! These babies are loaded with goodness. One medium potato has 70% of your daily value of vitamin C, and 30% of your B-6. They also boast healthy doses of potassium, magnesium, iron, calcium and fiber. And here’s the part I love, 4.3 grams of plant-based protein! Eliminate the fats and add in antioxidant-abundant lemon and garlic — your Fries just transitioned into the good for you category.

Lemon Garlic Oven Fries

Lemon Garlic Oven Fries take the guilt out of a guilty pleasure! These crisp yet fat free fries go where no potato has gone before. Who would have thought that four ingredients could taste so good?!

Ingredients

  • 3 to 4 tablespoons fresh lemon juice
  • 3 tablespoons fresh garlic minced (about 5 to 6 large cloves)
  • finely ground sea salt and black pepper (I use 1/4 teaspoon salt and a few dashes of pepper in the lemon juice).
  • 2 to 2 1/2 pounds all purpose potatoes (1100-1200 grams or five medium potatoes) (Yukon Gold, russet, or butter potatoes)
  • 3 to 4 tablespoons fresh Italian parsley minced

Instructions

  • 1) Place lemon juice in a small bowl and add minced garlic, sea salt and black pepper. Set aside.
  • 2) Leaving skin on, wash and dry potatoes and cut in roughly quarter inch wedges (see picture in post).
  • 3) Place potatoes in large mixing bowl and add lemon juice garlic mixture. Mix well with hands.
  • NOTE: If browned garlic is not desired, strain it from lemon juice (before adding to potatoes) and set it aside. It may be added by sprinkling on top of potatoes halfway through the baking for a lightly browned garlic, or at the end for a fresher garlic.
  • 4) Spread potatoes in a single layer on parchment lined baking sheet (two baking sheets may be required). Sprinkle with additional sea salt and pepper, if desired. Bake at 450 degrees Fahrenheit for 20 minutes then turn potatoes over with a metal spatula, add more salt and pepper, if desired, and return to oven for an additional 10 minutes. Remove from oven when potatoes have lightly puffed up and browned to desired degree of crispness. Sprinkle with garlic (if withheld) and fresh parsley. Best if served warm.

Notes

    Could you use frozen fries?

      Hi Nalaine, though I have not used frozen fries myself, I think they would work. You will probably need to adjust the cooking time according to the package for the frozen fries. I hope this helps! 🙂

There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!

I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!
