This gluten-free, vegan, and refined sugar-free quinoa bowl floods your body with nutrients while warming your soul!
I am perpetually on the lookout for more ways to add quinoa into my diet. If you are interested in learning more about quinoa and all it has to offer, check out my earlier post: Simplifying Quinoa. I’ve always thought quinoa would make a great substitute for oatmeal — turns out it does. If cooked from sprouted form, it requires 15 minutes to cook, plus any time you would need to prepare it as a hot cereal. I know I’m not alone when I say that those early morning minutes are precious, and 20+ minutes just to prepare breakfast can be quite a bold proposition.
While on my recent vacation, I was in the local Whole Foods Market looking for something that would be a quick but healthy breakfast prep. Something to eat on the mornings when we did not frequent the gigantic breakfast buffet at the nearby hotel. Balance is always a good thing. We would alternate indulging tirelessly at the buffet with mornings of a get-up-and-go-for-a-bike-ride breakfast. I stumbled across a new product by Ancient Harvest, Gluten-Free Quinoa Hot Cereal Flakes — well, at least new to me. After reading the label, I discovered that it only required about 2 minutes in the microwave or on the stovetop to prepare, and the ingredients were simply organic whole grain quinoa flakes. Perfect! I added some bananas and a nice fruit cup to the cart and off we went. From this I was able to produce a delicious bowl of hot cereal that was packed with protein and adorned with sweet berries and pineapple in under 5 minutes. A tropical delight!
We returned home to autumn well underway in our part of the country. Chilly nights and leaves turning bright colors. After several mornings of waking to temperatures significantly lower than at the beach, I felt myself yearning for a little comfort in my hot quinoa bowl. Somehow the tropical fruit thing wasn’t cutting it anymore. Since nothing says comfort like apple pie, that’s my inspiration for this recipe. It meets all of the requirements for a perfect breakfast: quick and easy, nutritious, delicious and satisfying to your core. As a matter of fact, it’s so good you won’t want to limit it to just breakfast. I know I don’t!

Apple Pie Quinoa Breakfast Bowl, a five-minute comfort food for your body and belly! Nothing says warm and cozy like a bowl of hot cereal laced with sweet apples, cinnamon and brown sugar. This gluten-free, vegan, and refined sugar-free quinoa bowl floods your body with nutrients while warming your soul!
Ingredients
- 1 small or 2/3 of a medium ripe banana mashed
- 1/8 teaspoon sea salt
- 1/8 teaspoon cinnamon (more if desired)
- 1 teaspoon coconut palm sugar (more if desired)
- 1 tablespoon chopped walnuts (can be omitted or substitute pecans)
- 1/4 cup apple diced (reserve remaining apple to slice on top and/or dip in cereal)
- 1/3 cup quinoa hot cereal flakes (I use Ancient Harvest GF)
- 1/2 cup cold water
- 3 tablespoons cashew milk to pour on top (this can be omitted or substituted with other nut milks)
Instructions
- 1) Mash banana in bowl and mix in salt (this will give it a nice buttery effect). Stir in cinnamon, coconut palm sugar and walnuts.
- 2) Dice apple and add to bowl. Then add quinoa to bowl and mix together. Pour water on top and gently stir together. Microwave for 2 minutes on high power. Stirring every 45 seconds - 1 minute.
- 3) Remove from microwave and stir. Top with apple slices and remaining banana or toppings of choice. Pour on cashew milk and enjoy!
