Refined Sugar-free Truffles
For some people, nothing says “You’re loved”, “You’re worth it”, “You deserve the best” like a fine confection. There is a reason Godiva sells a half-billion dollarsworth of chocolates every year.
The simple act of taking a beautifully crafted truffle between your fingers, admiring it, and savoring its artistic appeal can transcend the craziness of life. Biting into it you feel the smooth sweetness in your mouth married to the flavor that is unmatched.
The problem for me was these special moments turned into 24 hours of pure misery as I nursed the headache that always followed. Processed sugar can be quite the fiend. For a time I had to give up these ethereal bits.
No longer! Determined, I set out to recreate this experience with a healthier version–one that would leave my body feeling as good as my mind. Just as wonderful as their commercial counterparts these truffles are gluten-free, plant-based, vegan and refined sugar-free. Success!
Nutrient Rich Truffles
So many nutrients and so little time! Almond flour and coconut flour bring so many healthful things to this recipe. They are both high in fiber and low in carbohydrates while providing a nice plant-based protein.
Almond flour is high in monounsaturated fats which has been shown to be great for cardiovascular health.
Coconut palm sugar and maple syrup bring a combined large list of nutrients: vitamin C, potassium, phosphorus, magnesium, calcium, zinc, iron and copper along with antioxidants.
Their lower glycemic index allows the body time to burn off the carbohydrates they bring to the party without causing a spike in insulin production or storing a lot of it as fat.
Once you add in the coconut oil all of these combined ingredients are providing great sources of vitamins and minerals, antioxidants and phytochemicals to help reduce those free radicals and boost the immune system.
Nutritious No Bake Cookie Dough Truffles
This nutrient dense, easy, no-bake recipe can be made any time and stored in the freezer or refrigerator. Save them for a special moment or break them out at your next party!
These no bake delights will pass over your lips as a fine confection. The taste, and texture feel like you are eating something too decadent to be healthy, but that's not the case. They have many plant based nutrients and are refined sugar free! Make a bunch and freeze them for a quick treat right out of the freezer or serve them up to guests at your next party.
Ingredients
- Dry
- 1/4 cup pecans chopped fine
- 1/4 cup + 1 tablespoon coconut flour
- 1/4 cup lightly packed almond meal flour
- 3 tablespoons coconut palm sugar
- 1/8 teaspoon finely ground sea salt
- Wet
- 1 flax egg (1 tablespoon golden flax seed meal + 2 1/2 tablespoons water)
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil (melted)
- 1 teaspoon vanilla
Instructions
- 1) Prepare flax egg. (under "wet" ingredients) Mix flax meal with water in a small bowl and set aside. It will form a gelatinous mixture.
- 2) Chop pecans finely and set aside.
- 3) Mix together dry ingredients: pecans, coconut flour, almond meal flour, coconut palm sugar and sea salt in a small/medium mixing bowl.
- 4) Melt coconut oil in a small bowl or cup. Then add flax egg, maple syrup and vanilla to coconut oil and stir well with a spoon.
- 5) Pour wet ingredients into dry ingredients and mix well with a spoon. It will form a stiff dough. If you are having difficulty getting it mixed well, it may be helpful to cut the dough, like cutting butter into flour for a pie crust, Refrigerate dough while doing steps 6 and 7.
- 6) Prepare toppings.
- You can top these truffles in just about anything. Some of the toppings I used were:
- -- Chocolate (melted Enjoy Life gluten-free, vegan chocolate chips **)
- -- Cinnamon sugar (2 tablespoons coconut palm sugar mixed with 1/2 teaspoon cinnamon)
- -- Choco-nut (dough rolled in melted chocolate and then in chopped nuts of your choosing)
- -- Choco-coco (dough rolled in melted chocolate and then sprinkled with coconut flakes)
- 7) Use a small melonball scoop to form dough into balls and place on a baking sheet covered in parchment paper. If you do not have a scoop you can form the dough balls with two teaspoons. Yields approx. 1 dozen 1-inch balls. Place in freezer for 10 minutes. It is not necessary to freeze the dough balls before topping them but in the warmer months I recommend it as it makes them easier to work with.
- 8) Place each of your selected toppings in their own small bowl. Roll dough balls in topping, rotating to thoroughly coat. After ball is coated return it to the baking sheet. Once finished you may place them in the freezer on the tray for 30 minutes to assure that toppings are firm.
- These can be kept in the freezer or refrigerator and eaten both ways. Either is delicious!
Notes
The prep time does not include time for refrigeration or freezing.
**When coating in chocolate be sure to let melted chocolate cool to the touch before dipping dough balls. Chocolate may be melted alone to make a thicker, crunchier, more candylike shell or melted with coconut oil (3 tablespoons chocolate: 1 teaspoon coconut oil) to make a thinner shell.
