
I don’t know about you, but when I smell my pot of freshly brewed coffee in the morning the next thought that follows, without hesitation, is wouldn’t something sweet taste so amazing with this. Alas, a few years ago when I realized that processed sugar was a fair-weather friend, I thought my days of coffee and sweet treats were over. It became clear to me that I really couldn’t continue such a toxic relationship if I wanted to have a productive life. The fallout of the sugar crashes and lack of protein to sustain me through the morning were seriously impacting my ability to get anything accomplished. Today life is good–I would even say great! I have so many recipes that pack loads of plant protein and fiber to keep my body energized through the morning, yet taste delicious without adding any processed or refined sugar to bring me down.
These Protein Packed Chocolate Chip Oatmeal Breakfast Cookies do just that. I use Nutiva Hemp Protein Chocolate Shake mix to bring most of the protein, omega 3s, magnesium, potassium, iron and zinc to these cookies, and Bob’s Red Mill Gluten Free Oats provide additional protein and iron. I have not tried this recipe with other protein powders but I have no reason to believe that they wouldn’t work as well. These cookies are sweet, chewy, tasty–and are filling. Best of all this recipe is quick, easy and can be made in a pinch!
Serving suggestions: If you want an extra dose of sweetness you can drizzle them with maple syrup. If you want and extra dose of protein you can spread a nut butter of your choosing on top. This is a very flexible recipe. Have fun experimenting with alternatives! Enjoy!

These Chocolate Chip Oatmeal Cookies make a protein packed healthy breakfast, but are so delicious they can be eaten any time of day. They boast high protein and fiber to satisfy your appetite til lunch, with no refined sugar, keeping the sugar crash away!
Ingredients
- Dry:
- 1/2 cup Gluten-free oats
- 1/4 cup Gluten-free oat flour
- 1/4 cup Chocolate protein shake powder (I use Nutiva brand hemp protein but substitutions of other brands shouldn't be a problem)
- 2 tablespoons reduced fat, unsweetened finely shredded coconut
- 1 tablespoon (rounded) unsweetened bakers cocoa
- 1 tablespoon mini chocolate chips (I use Enjoy Life dairy free, gluten-free)
- 1/4 teaspoon granulated sea salt
- Wet:
- 1/2 cup applesauce
- 1/2 teaspoon vanilla extract (mixed into applesauce)
Instructions
- 1) Preheat oven to 350 degrees Fahrenheit. Place parchment paper on a baking sheet.
- 2) Stir together dry ingredients in a small mixing bowl.
- 3) Stir vanilla extract into applesauce.
- 4) Mix applesauce and dry ingredients together.
- 5) Divide dough into 4 equal parts. Place 1/4 of dough in hands, and roll into a ball. Place ball of dough on baking sheet and press into a disc about 1/3-1/2 inch thick. Repeat with remaining dough.
- 6) Bake on baking sheet for approx. 11 minutes. The cookies should be firm on the outside but soft on the inside. Place on a cooling rack for 5-10 minutes (depending on whether you want to eat them warm!)
Notes
It is not necessary to use the same protein powder I use, or even hemp protein for that matter. I have not tried the recipe with other powders but any protein powder that can be cooked should be fine. Also, if you prefer a sweeter cookie you could add 1 tablespoon coconut palm sugar to the dry ingredients.
