Vegan Brookie No-Bake Cheesecake! A mouthwatering, smooth richness that melts in your mouth and leaves you longing for another slice. The tangy sweetness of chocolate chip cheesecake blends with the chocolaty goodness of a brownie crust. Simply divine!

The Brookie Factor

A little more than a year ago, I created my recipe for Brookies. Happy birthday, Brookies! These bars of lovin’ goodness are gluten-free, vegan, and refined sugar-free chocolate chip cookies which serve as a base complemented by a rich chocolate brownie top. I am humbled by how much love this recipe has been given and grateful for all of the great comments, feedback, and 100K repins on Pinterest.

Over the months, I received so many requests for nut substitution options that in January I released a recipe for Allergy Friendly Brookies (Gluten-free, Vegan/Plant-based, Nut-free, Soy-free and Refined Sugar-free).

As I contemplated all of the possible flavor combinations I could use in my first cheesecake recipe, one stood out among the rest. So here it is, the third part of the Brookie trilogy: Vegan Brookie Cheesecake!

It’s What’s NOT In It

How can it taste this incredible and still be healthier than traditional cheesecake?! Sometimes half the battle of making traditional dishes healthier is eliminating unhealthy ingredients.

So I’m going to tell you what’s not in this cheesecake. It is gluten-free, refined sugar-free, soy-free and does not contain any animal products or sketchy oils.

Healthier No-bake Cheesecake

Most of the ingredients in my Vegan Brookie Cheesecake benefit from the “no-bake” status, retaining more of their nutrients and a higher degree of bioavailability — enter plant-based protein and healthy fats.

So just sit back and enjoy with your favorite cup of tea or a fresh pot of coffee!!

Vegan Brookie No-Bake Cheesecake (Gluten-free, Plant-based, Refined Sugar-free)

Vegan Brookie Cheesecake

Vegan Brookie No-Bake Cheesecake: a mouthwatering, smooth richness that melts in your mouth and leaves you longing for another slice. The tangy sweetness of chocolate chip cheesecake blends with the chocolaty goodness of a brownie crust. Simply divine!

Ingredients

  • Crust
  • 1 cup chopped dates (soaked in warm water for 5 minutes)
  • 1/4 cup golden raisins (soaked with dates in warm water)
  • 1 1/2 cups almond meal
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon plus 2 teaspoons pure vanilla extract
  • 1/2 teaspoon finely ground sea salt
  • Cake
  • 1 1/2 cups raw cashews (soaked in hot water for at least 20 minutes, should be swollen and soft)
  • 1/3 cup coconut oil melted (I use virgin since it is not baked)
  • 1/3 cup coconut nectar (maple syrup may be substituted with a small flavor change)
  • 1/4 cup cashew milk (other nut or seed milks may be substituted)
  • 1 tablespoon plus 2 teaspoons lemon juice
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons coconut palm sugar
  • 1/4 teaspoon finely ground sea salt
  • 1/2 cup vegan chocolate mini chips (more if desired for drizzle, I use Enjoy Life brand)

Instructions

  • 1) Lightly grease bottom of 8 inch cake pan or 9 inch spring form pan and set aside. Soak chopped dates and raisins in hot water for about 5 minutes and raw cashews in hot water for at least 20 minutes (should be swollen and soft).
  • 2) Drain dates and raisins and place in food processor. Blend (while periodically scraping sides) until a pasty texture with some chunks (see picture in post). Add almond meal, cocoa powder, vanilla, and sea salt. Blending (with periodic scraping of the sides) until a dough ball forms.
  • 3) Flatten dough ball and press onto bottom of greased pan (flattening and spreading until whole pan base is covered). See picture in post. Place in freezer until ready to spread cheesecake mix.
  • 4) Drain cashews. Place in food processor and blend until chunky. Add in coconut oil, coconut nectar, and cashew milk and blend until smooth. Add lemon juice, vanilla, coconut palm sugar, and sea salt. Blend until smooth (see picture in post). Transfer to mixing bowl and stir in chocolate chips. Pour on top of chocolate crust and spread with a spatula until smooth. Place covered in freezer for a minimum 3-4 hours. To apply drizzle, melt chocolate and drizzle with teaspoon. Return to freezer for 5 minutes.
  • 5) To serve remove from freezer. If a softer texture is desired, allow to sit at room temperature for about 20 minutes. It is also delicious served directly from freezer as a frozen cheesecake dish.

Notes

Total Time does not include time in freezer

Pans I used a springform pan as it makes for easier removal, but a cake pan may be substituted. If a thicker cake is desired a smaller pan can be used.

    Love this healthy cheesecake. Date’s and cashews are some of my favourite ingredients to make desserts with so I definitely would love to try this out!

There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!

I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!

After some convincing I acquiesced. I've spent much of my life in two of the neighboring states to West Virginia, but my travels there rest solidly in the single digits. Once firmly afoot the gorgeous Appalachian Mountains, I realized a deficit in my life. Air--fresh air. Breaths--slow and deep. Healing--quieting stress in mind and body.

Looking around I knew it was important to capture this moment. A reminder. Grabbing my phone that had long since disconnected itself from cyberspace, I began snapping pictures.
