Toffee Nut Caramels (Gluten-Free, Vegan / Plant-Based, Refined Sugar-Free)

December 9, 2015 By Jana 1 Comment

Toffee Nut Caramels are three flavors united in one luscious treat! Sweet caramel flavor blended in a soft but textured nutty bite perfectly surrounded by sweet chocolate. After making my Toasted Marshmallow Brownies, I was not ready to move on from chocolate desserts. After all, it is the season for decadent goodies so . . . well, at least that's what I'm going with! Every holiday season a box (or two) of imported chocolates seems to make its way into our house. I'm not gonna lie to ...

Toasted Marshmallow Brownies (Gluten-Free, Bean-Free, Vegan / Plant-Based, Refined Sugar-Free)

December 4, 2015 By Jana 6 Comments

Toasted Marshmallow Brownies

Toasted Marshmallow Brownies combine a super-moist fudgy brownie with the creamy, caramelized sweetness of toasted marshmallow. Pure decadence and delight! It all starts in 10th grade Biology Where would I be without 10th grade Biology class? While there are probably a host of interesting answers to this question, today my answer is brownieless.  Or at least homemade brownieless. One day I headed into the dreary, dark classroom in the basement of my high school. My head hung as I ...

Golden Pomegranate Scones with tips for easily removing Arils / Fruit (Gluten-Free, Vegan / Plant-Based, Refined Sugar-Free)

November 6, 2015 By Jana Leave a Comment

Golden Pomegranate Scones

Golden Pomegranate Scones are tiny bursts of sweet and tart pomegranate juice complemented by the caramel-like sweetness of golden raisins. They will tingle your taste buds and thrill your body and soul! Pomegranate Season I'm really more of a warm weather kind of person.  But I have to say I love autumn and winter for all of the cool fruit and vegetables that come into season. Pomegranates definitely fall into this category. The arils (or seeds) are little ruby colored jewels that ...

Fresh Cranberry Crumb Bars

Fresh Cranberry Crumb Bars nestle a fruity cranberry filling in between two layers of buttery crumb sweetness! Healthy Holiday Treats Happy November 1st, everyone! It is officially the beginning of the most wonderful time of the year -- at least in my world! Thanksgiving is just around the corner.  By the time we've all finished digesting Thanksgiving dinner, a few weeks later it will be Christmas, then the New Year.  I created this recipe as a prelude to all of the other ...

Cranberry Orange Wafers (Gluten-Free, Vegan/Plant-Based, Refined Sugar-Free)

October 5, 2015 By Jana Leave a Comment

Cranberry Orange Wafers

Cranberry Orange Wafers pair sweet cranberry tang with sprightly citrus notes. These light, buttery, delicate cookies fuse the tastes of two flavors that have always been destined to become one. Pairing Cranberry and Orange I love the taste of fresh citrus, especially oranges--so sweet with natural sugars, yet your palate is left feeling clean and fresh. Cranberries defy nature. Somehow, they succeed in merging sweet and tart into one flavor-filled expression. But the real culinary ...

October 1, 2015 By Jana 12 Comments

Mocha Pumpkin Scones

Mocha Pumpkin Scones offer a rich, buttery, chocolaty flavor, yet free from all that ails you--not your average biscuit!   Gluten-free, Plant-based & Refined Sugar-free Scones Merriam-Webster defines the word free many different ways. One meaning is being relieved from or lacking something unpleasant or burdensome. The Mocha Pumpkin Scones are exactly that--free of gluten, non plant-based ingredients, refined sugar and ...

Choco Chip Cocoa Cookies (Gluten-Free, Vegan, Refined Sugar-Free)

September 8, 2015 By Jana Leave a Comment

Choco Chip Cocoa Cookies Plated

A rich cocoa treat that is moist, delicious and, best of all still packed with nutritional love! I love what I do! Creating recipes that taste great, while eliminating ingredients that are unhealthy and replacing them with ingredients that offer nutritional benefits all at the same time--a win/win! But I really love when one of these recipes can meet more than one culinary need. Multi-tasking can save a lot of time, especially where a recipe is concerned. I find that the more I make a recipe ...

Apple Cake Muffins (Gluten-Free, Vegan, Refined Sugar-Free)

July 31, 2015 By Jana 23 Comments

A culinary miracle! Apple Cake Muffins that are gluten-free, vegan, refined sugar-free, and oil free, but still bursting with flavor and richness. Much like their traditional predecessor--German Apfelkuchen--these muffins are moist and delicious! Apple Cake Muffins Such a perfect marriage of flavor and texture that I really couldn't have chosen any other name. I've been feeling a bit nostalgic of my connection with Germany lately. Can you tell? My last post was a strudel and this ...

Lemon-Berry Biscuit Bread w/ Raspberry Glace (Gluten-Free, Vegan/Plant-Based, Refined Sugar-Free)

June 27, 2015 By Jana Leave a Comment

So many berries and so little time!  Fresh fruit is aplenty right now and I'm not complaining. Hand in hand with berry season are berry muffins--so delicious and versatile.  They make a great breakfast, dessert, or palate cleanser accompanying a decadent, savory meal. Traditional muffins, unfortunately, are not only packed with great flavor but also gluten and refined sugar. Therein rested my next challenge: to create a delicious baked product that was an explosion of berry flavor while making ...

Pantry problems?? When was the last time you clean Pantry problems?? When was the last time you cleaned it out or gave it a re-org? Whether your pantry has a door or is a cabinet in your kitchen, it pays to give it some TLC once in a while. 💕 I find it plays a key role in preparing meals at home--making it realistic and doable, not dread-worthy. 😣 From freeing up space by tossing items that have exceeded their shelf life to arranging items based on frequecy of use, you'll reap the reward everytime you step into your kitchen!! 💯

When was the last time you did a pantry purge❓ Would you find it helpful if I provided a step by step post or video❓ Let me know in the comments below! 🙋‍♀️🙌😊
I grew up appreciating and loving my mother’s ha I grew up appreciating and loving my mother’s handcrafted fudge. One of the many things I always looked forward to in the holiday season was mom churning out large bowls of this fudge to gift. Naturally, someone had to taste every batch and assure it was gift-worthy! 🙋‍♀️😁
[]
While this recipe is dramatically different in ingredients from traditional fudge, the taste is identical to moms. Identical. It requires only six ingredients, but you may be really surprised by one of them. Being a fudge purist, I ensured this exquisite yet simple dessert is nothing short of a pure, chocolate delight. I use coconut sugar instead of the "sugar coma" inducing refined sugars, and for that creamy goodness I use a ripe avocado. Yep! NO avocado flavor. Use a nice ripe avocado and this chocolate goodness is mouth-watering indulgent but healthier too!”

I created this recipe for Creamy Avocado Fudge years ago, and have gotten so many requests for it that I included it in my new Eat Well, Be Well cookbook! Link above. ☝️ 🥑🍫😋
I want to share a personal bit that I didn't inclu I want to share a personal bit that I didn't include when writing the Introduction to Eat Well, Be Well. In the Intro, I talk about some of the reasons I wrote the book. While they stand true, there is another layer I did not address.

My father was diagnosed with Type 2 Diabetes when I was young. Even then, there was a link established between dietary modifications and the progression of this disease. His doctors told him that he could dramatically slow the progression by changing his diet. Over the years we watched my father try to change the way he ate, but he would always return to his prior way of eating. Healthy food recipes that tasted delicious simply did not exist back then, or were very scarce.
[]
My father's disease progressed from oral medication to insulin injections to a loss of vision and ultimately kindney failure. He passed away at a very young age, in his mid 50's, after a failed kidney transplant. It was devastating, as is always the case in the loss of a loved one.
[]
One of the many thoughts that stuck with me over the years after his passing was the feeling that it didn't have to be that way. I know I'm not alone. Many feel this way when faced with the loss of a loved one. But I wanted to do something, if even in a very small way, to help other people avert premature loss.
[]
My greatest inspiration for creating these recipes is to use a loss for good. Making food that is life promoting and nourishing, yet doesn't make you feel like you are sacrificing by abstaining from palate pleasing flavors. I create these recipes to provide people that are battling preventable diseases, or want to be a healthier version of themselves, alternatives to the life-robbing foods. Ones that don't require isolation at the dinner table. Dishes that can be shared and enjoyed by all!
[]
I know my father would be happily picking up his fork to eat these recipes on repeat, and for me that is the ultimate satisfaction!
[]
What inspires you to do what you do?❓❓ 💗😊💯
