Toasted Marshmallow Vegan Smoothie (Gluten-free, Plant-based, Refined Sugar-free)

Toasted Marshmallow Vegan Smoothie - Dessert Version

Toasted Marshmallow Vegan Smoothie! Reminiscent of a rich, thick and creamy 50's-era shake. A healthy breakfast smoothie by day, or a rich decadent dessert by night -- recipes for both!   Those We're the Days As a child, one of my favorite traditions occurred at the end of the school year. My grandfather would take my brother, my two cousins and me to the local ice cream parlor for shakes or sundaes. I remember the tall parfait glasses struggling to contain the luscious, heavy, ...

May 2, 2016 By Jana Leave a Comment

Corn & Chickpea Polenta

Corn and Chickpea Polenta blends the rich heritage of Italian cuisine with the modern need for healthier dishes and flexible serving options. A creamy, flavorful dish that makes: a great bed for sauce; a healthier alternative to French fries; a delicious warm bread served straight from the oven, all providing a great source of plant-based protein! What is Polenta Made From? If you ask someone what polenta is made from most will answer corn. While today that is a pretty ...

Chocolate Peanut Butter Protein Bars

Chocolate Peanut Butter Protein Bars are a fudgy, delectable delight boasting 9 grams of plant-based protein without the use of soy. So nutritious they make a great breakfast or snack, but so delicious you'll want to serve them for dessert! I love chickpeas (aka garbanzo beans). My Roasted Chipotle Chickpeas are a great zesty little snack, and my ...

Roasted Garlic and Red Pepper Spread (Gluten-free, Vegan/Plant-based)

March 29, 2016 By Jana Leave a Comment

Roasted Garlic and Red Pepper Spread

Roasted Garlic and Red Pepper Spread - A perfect flavor pairing. So creamy, rich and smooth you will never guess it's plant-based. The Magic of Roasted Garlic Is there anything more appetizing than the scent of garlic roasting in olive oil? Once roasted, a flavor that can sometimes be a little pungent, transforms into a tempered, smooth, nutty deliciousness! For this very reason I knew that using cashews for the creamy base would be a great success. Add in a little red bell ...

They are an impressive source of plant-based protein and many other nutrients. (To get all the details of what chickpeas have to offer, check out my ...

PB&J Smoothie (Gluten-Free, Vegan / Plant-Based)

February 20, 2016 By Jana Leave a Comment

PB&J Smoothie

The PB&J Smoothie merges nostalgia and nutrition into one creamy, delicious treat! I have a confession to make: I'm not really much of a smoothie person. I see lovely pictures in the blogosphere of smoothies placed in various creative vessels and poised on a deck rail or buried in snow. I've tried many smoothies over the years but none have really blown my socks off. They either contain way to much sugar to be healthy or a boatload of dairy. Or they mix veggies in with fruit which I ...

There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!
🍽
I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!
🍽
With the holidays fast approaching, I am always on the lookout for great gift ideas. Gina's cookbook, and all it has to offer, would definitely make a lovely present to bestow! You can find Gina and her cookbook @foodieandwinelover

At least that was the case this weekend as I traveled down the apropos named "Road to Nowhere"--alternatively Corridor H in West Virginia. Resistant to abandon my plans to study for the day as I eagerly look forward to completing my continuing education and additional certifications in nutrition and wellness.
🍁
After some convincing I acquiesced. I've spent much of my life in two of the neighboring states to West Virginia, but my travels there rest solidly in the single digits. Once firmly afoot the gorgeous Appalachian Mountains, I realized a deficit in my life. Air--fresh air. Breaths--slow and deep. Healing--quieting stress in mind and body.
🍁
Looking around I knew it was important to capture this moment. A reminder. Grabbing my phone that had long since disconnected itself from cyberspace, I began snapping pictures. The leaves are turning, the wind turbines are spinning, and the colors are amazing. I've shared a couple above if you'd like a taste.

I am a planner and, "A goal without a plan is just a wish." Antoine de Saint-Exupéry. But on this day letting go of the plan was the best plan of all! So tell me, are you a planner?? Do you plan not to plan?? How do you unplug? Have you taken a ride on the road to nowhere?

But did you know they also amp up the nutrient value of your dish? A tablespoon of parsley has 8% of your Daily Value of vitamin C and can be a natural diuretic. Many herbs contain antioxidants and can act as anti-inflammatory agents. If you don't already love herbs, you will after you watch the live chat I had with Lori Corbin.
