Asparagus Quinoa Purple Potato Salad (Gluten-Free, Vegan/Plant-Based)

July 15, 2015 By Jana Leave a Comment

Quinoa Asparagus Purple Potato Salad

Almost too pretty to eat! This twist on traditional potato salad is packed with nutrients and tastes as wonderful as it looks. Bright purple potatoes and deep green asparagus make a lovely addition to any table. Complemented by the nuttiness of quinoa and infusions of lemon and garlic, it will be impossible to stop at one serving. Serve it warm or cold, it's delicious either way!     Colorful Potato Salad I loved developing this recipe. The colors are so bright and ...

Simple Sweet Veggie Breakfast (Gluten-Free, Vegan, No Sugar Added)

June 17, 2015 By Jana Leave a Comment

Veggies for breakfast? Huh? I was raised on pancakes, oatmeal, cereal and toast with jelly. As much as I have come to adore vegetables--for lunch or dinner there is nothing better--I still struggle with incorporating them into my breakfast.  Every day more research is presented on the value of a plant-based diet. Since most veggies are not complete proteins we need to eat a large variety to assure that we are meeting the full amino acid profile. Incorporating vegetables as often as possible is a ...

Fire-Roasted Three Chili Guacamole

Three Chili Guacamole

California might be the greatest place on earth.  I'm not talking about Hollywood here.  I'm not talking about the all the gold it once harbored in its hills.  I'm not even talking about the Napa and Sonoma Valleys.  California is important across the landscape of history for a place called La Habra Heights.  Never heard of it?  Allow me to enlighten you. Why Hass Avocados Are So Good In 1926, a mail-carrier-cum-amateur-horticulturist named Rudolph Hass ...

Vegan Cauliflower Egg Salad

Move over kale -- there's a new Brassica oleracea in town! Every year there seems to be a chosen one, the fruit or veggie that's going to rock your world with its former underappreciated benefits. This year, it's cauliflower. Why Cauliflower Is Good For You This cruciferous veggie is stepping out from behind its superstar siblings broccoli and kale, taking its rightful place in the spotlight as a superfood. Hard to argue because it really is a nutritional powerhouse. You will find the ...

Brookies (Gluten-Free, Vegan, Dairy-Free, Refined Sugar-Free)

March 7, 2015 By Jana 64 Comments

Brookies Served

I had never heard of Brookies until my kids spotted them in the fresh-baked section at our Wegmans grocery store.  Turns out this delightful little dessert is a chocolate chip cookie (on the bottom) and brownie bar (on top).  While I had to agree that this treat was to die for, at the same time my head ached as I envisioned all of the processed sugar and gluten that my kids were consuming. How to Make Gluten-free Vegan Brookies So my next challenge lay before me. . . creating a Brookie ...

Simplifying Quinoa

January 16, 2015 By Jana Leave a Comment

Picture of raw quinoa

What is Quinoa? Well, the mystery is solved: Quinoa is pronounced ‘keen-wah’.  It comes from South America, and while it is commonly referred to as a grain it is actually a seed.  It is a "pseudo grain" or "pseudo cereal" because it is not actually a member of the grass family.  You will see it in red, gold and black varieties, and they all pretty much taste the same. Now let's talk about all of its nutritional goodness! Quinoa is a considered a "superfood".   The Oxford Dictionary ...
