Chocolate Chip Oatmeal Breakfast Cookies (Gluten-Free, Vegan, Refined Sugar-free)

Protein Cookies

I don't know about you, but when I smell my pot of freshly brewed coffee in the morning the next thought that follows, without hesitation, is wouldn't something sweet taste so amazing with this.  Alas, a few years ago when I realized that processed sugar was a fair-weather friend, I thought my days of coffee and sweet treats were over.  It became clear to me that I really couldn't continue such a toxic relationship if I wanted to have a productive life.  The fallout of the sugar crashes and lack ...

Coco-roon Brownies

Dessert tends to be a crowded field in any household.  Even if you like one particular type of pizza or coffee or salad dressing, odds are you're open to an array of sweet finishers.  In our home we try to experiment, but we do tend to fall back to the snacks that provide repeat, consistent enjoyment--and which are made with organic and nutritious ingredients! Enter Wonderfully Raw's Brownie Coco-Roons.  Once bought on a whim, they are now regularly tossed in the shopping cart.  These ...

Fudgy Chocolate Torte (Gluten-Free, Vegan, Refined Sugar Free and Easy!)

March 21, 2015 By Jana 14 Comments

Comfort Food Everyone has a different definition of comfort food. To one person it might be fried chicken, to another a steaming dish of macaroni and cheese, to yet another a banana split.  Influences come from how and where you were brought up, as well as your particular palate and what tastes (and feels) good in your mouth--not to mention your belly.  But there may be one comfort food we agree on more than any other: chocolate cake. Dress it up any way you want. Get all gourmet and drizzle a ...

Brookies (Gluten-Free, Vegan, Dairy-Free, Refined Sugar-Free)

Brookies Served

I had never heard of Brookies until my kids spotted them in the fresh-baked section at our Wegmans grocery store.  Turns out this delightful little dessert is a chocolate chip cookie (on the bottom) and brownie bar (on top).  While I had to agree that this treat was to die for, at the same time my head ached as I envisioned all of the processed sugar and gluten that my kids were consuming. How to Make Gluten-free Vegan Brookies So my next challenge lay before me. . . creating a Brookie ...

Recipe: Pop-Q’s (puffed quinoa & maple syrup bites)

February 25, 2015 By Jana Leave a Comment

Pop-Q's

I've been curious about quinoa for a while.  Recently I spent some time learning about quinoa and why it is considered a superfood.  The result of this effort was a post called Simplifying Quinoa which summarizes many of quinoa's highlights, and a post in Helpful Hints: The Many Faces of Cooking Quinoa.  What I'm most thrilled with, however, is this recipe that "popped" into my head as I stood staring at my puffed quinoa. After learning how awesome quinoa is -- being a plant protein and a ...

There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!

I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!

With the holidays fast approaching, I am always on the lookout for great gift ideas. Gina's cookbook, and all it has to offer, would definitely make a lovely present to bestow! You can find Gina and her cookbook @foodieandwinelover

At least that was the case this weekend as I traveled down the apropos named "Road to Nowhere"--alternatively Corridor H in West Virginia. Resistant to abandon my plans to study for the day as I eagerly look forward to completing my continuing education and additional certifications in nutrition and wellness.

After some convincing I acquiesced. I've spent much of my life in two of the neighboring states to West Virginia, but my travels there rest solidly in the single digits. Once firmly afoot the gorgeous Appalachian Mountains, I realized a deficit in my life. Air--fresh air. Breaths--slow and deep. Healing--quieting stress in mind and body.

Looking around I knew it was important to capture this moment. A reminder. Grabbing my phone that had long since disconnected itself from cyberspace, I began snapping pictures. The leaves are turning, the wind turbines are spinning, and the colors are amazing. I've shared a couple above if you'd like a taste.

I am a planner and, "A goal without a plan is just a wish." Antoine de Saint-Exupéry. But on this day letting go of the plan was the best plan of all! So tell me, are you a planner?? Do you plan not to plan?? How do you unplug? Have you taken a ride on the road to nowhere?

But did you know they also amp up the nutrient value of your dish? A tablespoon of parsley has 8% of your Daily Value of vitamin C and can be a natural diuretic. Many herbs contain antioxidants and can act as anti-inflammatory agents. If you don't already love herbs, you will after you watch the live chat I had with Lori Corbin.
