Toasted Marshmallow Brownies (Gluten-Free, Bean-Free, Vegan / Plant-Based, Refined Sugar-Free)

December 4, 2015 By Jana 6 Comments

Toasted Marshmallow Brownies

Toasted Marshmallow Brownies combine a super-moist fudgy brownie with the creamy, caramelized sweetness of toasted marshmallow. Pure decadence and delight! It all starts in 10th grade Biology Where would I be without 10th grade Biology class? While there are probably a host of interesting answers to this question, today my answer is brownieless.  Or at least homemade brownieless. One day I headed into the dreary, dark classroom in the basement of my high school. My head hung as I ...

Golden Pomegranate Scones with tips for easily removing Arils / Fruit (Gluten-Free, Vegan / Plant-Based, Refined Sugar-Free)

November 6, 2015 By Jana Leave a Comment

Golden Pomegranate Scones

Golden Pomegranate Scones are tiny bursts of sweet and tart pomegranate juice complemented by the caramel-like sweetness of golden raisins. They will tingle your taste buds and thrill your body and soul! Pomegranate Season I'm really more of a warm weather kind of person.  But I have to say I love autumn and winter for all of the cool fruit and vegetables that come into season. Pomegranates definitely fall into this category. The arils (or seeds) are little ruby colored jewels that ...

Figgy Panini Delight (Gluten-Free, Vegan / Plantbased, Refined Sugar-Free)

Figgy Panini Delight - Plated

The Figgy Panini Delight is a warm, caramelized sweet fig, topped with a gooey, creamy vegan cheese nestled between two crispy brown slices of gluten-free bread that have been bathed in melted nut butter. This is not just your average sandwich or dessert! Combining the taste of refreshing fruit with the caramelized sweetness of coconut palm sugar and nut butter with a hint of cinnamon, topped with the creamy goodness of vegan cheese is well . . . quite a conundrum.  Is it a great ...

Creamy Avocado Fudge (Gluten-Free, Vegan / Plant-Based, Refined Sugar-Free)

October 11, 2015 By Jana 27 Comments

Avocado Fudge -Plated

Creamy Avocado Fudge is nothing short of a pure, chocolate delight! Exquisite yet simple--only 15 minutes of your time. Healthy and indulgent! No one ever guesses I put an avocado in this chocolate decadence--or for that matter, removed the cream and refined sugar. And I proved it -- I put traditional fudge next to my Creamy Avocado Fudge and not a single taster could figure which was which! Don't get me wrong.  I love avocados! I never had them as a child. That's got to be borderline ...

Cranberry Orange Wafers (Gluten-Free, Vegan/Plant-Based, Refined Sugar-Free)

October 5, 2015 By Jana Leave a Comment

Cranberry Orange Wafers

Cranberry Orange Wafers pair sweet cranberry tang with sprightly citrus notes. These light, buttery, delicate cookies fuse the tastes of two flavors that have always been destined to become one. Pairing Cranberry and Orange I love the taste of fresh citrus, especially oranges--so sweet with natural sugars, yet your palate is left feeling clean and fresh. Cranberries defy nature. Somehow, they succeed in merging sweet and tart into one flavor-filled expression. But the real culinary ...

Mocha Pumpkin Scones

Mocha Pumpkin Scones offer a rich, buttery, chocolaty flavor, yet free from all that ails you--not your average biscuit!   Gluten-free, Plant-based & Refined Sugar-free Scones Merriam-Webster defines the word free many different ways. There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!
🍽
I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!
🍽
With the holidays fast approaching, I am always on the lookout for great gift ideas. Gina's cookbook, and all it has to offer, would definitely make a lovely present to bestow! You can find Gina and her cookbook @foodieandwinelover

At least that was the case this weekend as I traveled down the apropos named "Road to Nowhere"--alternatively Corridor H in West Virginia. Resistant to abandon my plans to study for the day as I eagerly look forward to completing my continuing education and additional certifications in nutrition and wellness.
🍁
After some convincing I acquiesced. I've spent much of my life in two of the neighboring states to West Virginia, but my travels there rest solidly in the single digits. Once firmly afoot the gorgeous Appalachian Mountains, I realized a deficit in my life. Air--fresh air. Breaths--slow and deep. Healing--quieting stress in mind and body.
🍁
Looking around I knew it was important to capture this moment. A reminder. Grabbing my phone that had long since disconnected itself from cyberspace, I began snapping pictures. The leaves are turning, the wind turbines are spinning, and the colors are amazing. I've shared a couple above if you'd like a taste.

I am a planner and, "A goal without a plan is just a wish." Antoine de Saint-Exupéry. But on this day letting go of the plan was the best plan of all! So tell me, are you a planner?? Do you plan not to plan?? How do you unplug? Have you taken a ride on the road to nowhere?
