Vegan Cheese Crisps (Gluten-free, Plant-based, Low-carb)

April 3, 2016 By Jana 6 Comments

Vegan Cheese Crisps

Vegan Cheese Crisps are crunchy, low-carb crackers with cheesy deliciousness--but entirely plant-based! Plant-based Cheese Crisps My recipe for Cheese Crisps (gluten-free and dairy-free) was one of the first on Nutritionicity. It is also the only recipe that is not entirely plant-based as it contains eggs. These crackers are so awesome that I knew I had to eventually go back and recreate the recipe to make it vegan. I get so excited about all of the new recipes that I develop that I had ...

Toffee Nut Caramels (Gluten-Free, Vegan / Plant-Based, Refined Sugar-Free)

December 9, 2015 By Jana 1 Comment

Toffee Nut Caramels are three flavors united in one luscious treat! Sweet caramel flavor blended in a soft but textured nutty bite perfectly surrounded by sweet chocolate. After making my Toasted Marshmallow Brownies, I was not ready to move on from chocolate desserts. After all, it is the season for decadent goodies so . . . well, at least that's what I'm going with! Every holiday season a box (or two) of imported chocolates seems to make its way into our house. I'm not gonna lie to ...

Vegan Italian Meatballs (Gluten-Free, Soy-Free, Legume-Free, Plant-Based)

Vegan Italian Meatballs and Gluten-Free Pasta

Vegan Italian Meatballs are delicate, rich and tender, fully embodying the Italian experience. So authentic you'll have to remind yourself their name is oxymoronic! Vegan Italian Meatballs All of the recipes I post on Nutritionicity are developed with a lot of TLC. If I make something that I don't feel is truly exceptional, it doesn't get posted. I realize not every recipe is going to suit every person, but my goal is to try to please the vast majority. There are certain creations (that ...

There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!

I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!

With the holidays fast approaching, I am always on the lookout for great gift ideas. Gina's cookbook, and all it has to offer, would definitely make a lovely present to bestow! You can find Gina and her cookbook @foodieandwinelover

At least that was the case this weekend as I traveled down the apropos named "Road to Nowhere"--alternatively Corridor H in West Virginia. Resistant to abandon my plans to study for the day as I eagerly look forward to completing my continuing education and additional certifications in nutrition and wellness.

After some convincing I acquiesced. I've spent much of my life in two of the neighboring states to West Virginia, but my travels there rest solidly in the single digits. Once firmly afoot the gorgeous Appalachian Mountains, I realized a deficit in my life. Air--fresh air. Breaths--slow and deep. Healing--quieting stress in mind and body.
🍁
Looking around I knew it was important to capture this moment. A reminder. Grabbing my phone that had long since disconnected itself from cyberspace, I began snapping pictures. The leaves are turning, the wind turbines are spinning, and the colors are amazing. I've shared a couple above if you'd like a taste.

I am a planner and, "A goal without a plan is just a wish." Antoine de Saint-Exupéry. But on this day letting go of the plan was the best plan of all! So tell me, are you a planner?? Do you plan not to plan?? How do you unplug? Have you taken a ride on the road to nowhere?

But did you know they also amp up the nutrient value of your dish? A tablespoon of parsley has 8% of your Daily Value of vitamin C and can be a natural diuretic. Many herbs contain antioxidants and can act as anti-inflammatory agents. If you don't already love herbs, you will after you watch the live chat I had with Lori Corbin. Along with nutritional benefits, we talk about how to store, use, and even grow your own! Lori provides great tips for growing herbs inside and out!
