There is no thrill quite like opening a new cookbo There is no thrill quite like opening a new cookbook for the first time! Akin to exploring an uncharted destination; the possibilities are endless! As the title of this culinary masterpiece by Gina Zarcadoolas reads,"Cuisines, Corkscrews, & Cultures: A Treasury of Recipes, Wine Pairings, and Travel Lifestyles", the discovery is no longer metaphorical! Gina graciously includes us in her global travels while sharing a treasury of cultural recipes and wine pairing suggestions!

I was so excited to make "Gina's Naughty Spaghetti alla Puttanesca" (pictured above), and it did not disappoint! The well-crafted combination of gratifying flavors played out in a symphony of color and textures. As many of you know, I eat a plant-based diet. By no means does that mean I can't enjoy all of the delightful combinations of ingredients that Gina employs in her phenomenal recipes. Sometimes it just means a quick and easy substitution. For example, in this lovely Puttanesca, I merely substituted plant-based meat for the anchovies. To maintain the taste of the sea, a small addition of seaweed does the trick!

Sometimes no plan is the plan! At least that was t Sometimes no plan is the plan! At least that was the case this weekend as I traveled down the apropos named "Road to Nowhere"--alternatively Corridor H in West Virginia. Resistant to abandon my plans to study for the day as I eagerly look forward to completing my continuing education and additional certifications in nutrition and wellness.

After some convincing I acquiesced. I've spent much of my life in two of the neighboring states to West Virginia, but my travels there rest solidly in the single digits. Once firmly afoot the gorgeous Appalachian Mountains, I realized a deficit in my life. Air--fresh air. Breaths--slow and deep. Healing--quieting stress in mind and body.

Looking around I knew it was important to capture this moment. A reminder. Grabbing my phone that had long since disconnected itself from cyberspace, I began snapping pictures. The leaves are turning, the wind turbines are spinning, and the colors are amazing. I've shared a couple above if you'd like a taste.
